  • 1/4 cup Rice Flour
  • 1/4 cup Grated Coconut
  • 0.13 cup Jaggery, Grated
  • 0.13 teaspoon Cardamom Powder
  • 1/2 Bitter Gourds, Thinly Sliced
  • 1/2 tablespoon Ghee
  • 0.13 teaspoon Salt
  • as needed Water, As Needed

Cooking Directions

  • STEP 1.In a pan, heat ghee and roast grated coconut until golden brown.
  • STEP 2.Add jaggery and cardamom powder to the pan and mix well until the jaggery melts.
  • STEP 3.Remove from heat and let the filling cool.
  • STEP 4.In a separate pan, heat water and add salt.
  • STEP 5.Gradually add rice flour to the pan and mix well to form a smooth dough.
  • STEP 6.Take a small portion of the dough and flatten it in your palm.
  • STEP 7.Place a spoonful of the sweet filling in the center of the flattened dough.
  • STEP 8.Fold the edges of the dough to seal the filling and shape it into a dumpling.
  • STEP 9.Repeat the process with the remaining dough and filling.
  • STEP 10.Steam the dumplings in a steamer for about 15-20 minutes or until cooked.
  • STEP 11.Serve the sweet kozhukottai warm as a snack or dessert.

Cooking Tips

  • Make sure to roast the coconut until it turns golden brown to enhance the flavor.
  • Adjust the sweetness of the filling according to your preference by adding more or less jaggery.
  • You can add a pinch of salt to the filling to balance the flavors.
  • If the dough is too dry, add a little water to make it more pliable.
  • To prevent the dumplings from sticking to the steamer, line it with banana leaves or parchment paper.

Storage and Serving
