Directions: Bitter Gourd Masala Curry Recipe

Cooking Directions

  • STEP 1.Start by washing and slicing the bitter gourd into thin rounds. Sprinkle some salt on the slices and let them sit for 15 minutes to reduce the bitterness. Rinse the bitter gourd slices thoroughly and pat them dry.
  • STEP 2.Heat oil in a pan and add cumin seeds, mustard seeds, and curry leaves. Once they splutter, add chopped onions and sauté until golden brown.
  • STEP 3.Add ginger-garlic paste and sauté for a minute. Then, add the bitter gourd slices and cook for 5-7 minutes until they turn slightly tender.
  • STEP 4.In a separate bowl, mix together turmeric powder, red chili powder, coriander powder, and salt. Add this spice mixture to the pan and cook for another 2 minutes.
  • STEP 5.Next, add tomato puree and cook until the raw smell disappears. Add water as needed to adjust the consistency of the curry.
  • STEP 6.Cover the pan and let the curry simmer for 10-15 minutes on low heat, allowing the flavors to meld together.
  • STEP 7.Garnish with fresh coriander leaves and serve hot with rice or roti.
  • STEP 8.Cooking Tips: To reduce the bitterness of the bitter gourd further, you can soak the sliced rounds in buttermilk for 30 minutes before rinsing them. This will help in making the curry less bitter.
  • STEP 9.Storage and Serving: Leftover bitter gourd masala curry can be stored in an airtight container in the refrigerator for up to 2 days. Reheat it before serving. Serve the curry with steamed rice, roti, or naan for a complete meal.
