Ingredients for Bharli Vangi Recipe

  • 125 Gms baby brinjals
  • 0.13 Cup Peanuts
  • 1/2 Tbsps sesame seeds
  • 1/4 Cup desiccated coconut
  • 1.25 Packet arlic cloves chopped
  • 0.13 Inch chopped ginger
  • 1/4 Pieces chopped large onion
  • 1/4 Pieces tomato chopped
  • 0.13 Tsp turmeric powder
  • 0.13 Tsp red chili powder
  • 0.06 Tsp aram masala
  • 0.13 Tsp Coriander Powder
  • 0.13 Tsp cumin seeds powder
  • A Pinch asafoetida
  • 1/2 Tbsps oil
  • 1/2 Cups water
  • As Required salt

Directions: Bharli Vangi Recipe

  • STEP 1.Preparation For Bharli Vangi Wash the brinjals, slit them into 4 without breaking them and soak in salted water for 20 mins. You can also chop them and soak in salted water.
  • STEP 2.Dry roast the peanuts first, when they start to become brown, add the sesame seeds followed by dessicated coconut. Roast them till all of them are browned and smell fragrant. You can also roast them separately.
  • STEP 3.When the coconut, peanuts and sesame seeds cool down. Add them in a grinder with half of the chopped onions, ginger, garlic.
  • STEP 4.Grind to a smooth paste with some water. Make sure not to make it too liquidy.
  • STEP 5.In pan heat oil, add the onions and fry them till they turn transparent. Now add the ground masala to the pan.
  • STEP 6.Fry the masala for 2-3 mins. Add the all the dry spice powders and tomatoes.
  • STEP 7.Mix it well with the rest of the masala paste. Fry for another 2-3 mins.
  • STEP 8.Finally add the chopped brinjals. Add 2 cups water, salt and mix the entire curry.
  • STEP 9.Cover and let the brinjals cook until tender and softened. when the dish is ready, garnish with coriander leaves.
  • STEP 10.Serve bharli vangi hot with rice or chapati or puri.
