This is a popular style of cooking brinjals or baby brinjals stuffed with coconut, onion, jaggery, Marathi goda masala.Bharli vangi is a Maharashtrian-style stuffed brinjal recipe where small brinjals are stuffed with a spicy peanut masala and then simmered in a spicy onion tomato gravy.This curry is made in almost all Marathi households. Apart from everyday meals, you will also find bharli vangi in the festive or wedding menus.

Ingredients for Bharli Vangi Recipe

  • 10-12 Brinjals/ Vangi
  • 3 Onions Chopped
  • 1/2 cup grated coconut
  • 1/2 cup Coriander
  • 12 Garlic Cloves
  • 1/2 inch Ginger
  • 1/2 teaspoon Jaggery
  • As required Salt
  • 2 Green Chillies
  • 2 teaspoon crushed Groundnuts
  • 1 teaspoon Mix Masala
  • 1/2 teaspoon Garam Masala
  • 1/4 teaspoon turmeric powder th
  • 3-4 tablespoon Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds

Directions: Bharli Vangi Recipe

step 1

  • STEP 1.Heat oil in a pan. Add mustard seeds, cumin seeds, coriander leaves, turmeric powder, chopped onions and mix everything well. Add salt and cover the mixture with a lid.

  • STEP 2.Slit the brinjals and keep them in water.

step 3

  • STEP 3.Add mix masala, jaggery, garam masala, grated coconut, coriander leaves and some water. Mix all the ingredients well and cover the mixture with a lid and let it cook for a few minutes.

  • STEP 4.Fill the brinjals with coconut-coriander-green chillies-ginger-garlic mixture. Add the brinjals into the gravy. Cover it with a lid and let it cook for 10-15 mins.

  • STEP 5.Enjoy bharli vangi with chapati or bhakri.
