#snacks Bhaji Vada is a very famous local food in Jabalpur ( Madhya Pradesh). It is very tasty and quick to make. As it is winter season and we get almost all the greens very easily in this season, this bhaji Vada is often made in winter season and is a combination of spinach, Fenugreek, spring onion green and bathua. This can be enjoyed as a snack along with tea.

Ingredients for Bhaaji Vada Recipe

  • 0.13 cup Chopped spinach
  • 0.13 cup Chopped fenugreek leaves
  • 0.13 cup chopped spring onions green
  • 0.13 cup chopped bathua
  • 0.13 Tbsp tbso ginger-garlic paste
  • 0.13 Tbsp tbso green chillies chopped
  • 0.13 tsp Turmeric powder
  • 0.13 tsp Red chili powder
  • 0.13 tbsp Coriander seeds crushed
  • 1/4 cups Gram flour
  • 0.13 Kg Oil for deep frying
  • to taste Salt

Directions: Bhaaji Vada Recipe

  • STEP 1.Add all chopped greens like spinach, spring onion green, fenugreek and bathua and mix well.
  • STEP 2.Add gram flour, salt, turmeric powder, coriander seeds, red chili powder, salt, ginger garlic paste and green chillies paste. Mix all together, here we don't use water, what ever leaves have that will be enough. (If the mixture is loose add 1-2 tbsp of gram flour more). The batter should be tight.
  • STEP 3.Apply some oil in your plam, take about one lemon size thick batter make a round shape, and place into a hot oil.(like a tikki).
  • STEP 4.Deep Fry them till they cooked 50% then take out from oil, drain well.
  • STEP 5.After little cool press them with help of hand or back side of bowl.Make them flat and again re- fry them in hot oil, on high flame, till they become golden brown in colour and crispy.
  • STEP 6.Drain them on tissue paper, serve hot with tea or coffee
  • STEP 7.Serve immediately
