Cooking Directions

  • STEP 1.Wash and chop the okra into small pieces.
  • STEP 2.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves.
  • STEP 3.Add chopped onions and sauté until golden brown.
  • STEP 4.Add chopped tomatoes, turmeric powder, red chili powder, and sambar powder. Cook until the tomatoes are soft.
  • STEP 5.Add the chopped okra and cook for a few minutes.
  • STEP 6.Add tamarind pulp, salt, and water. Bring it to a boil and simmer for 10-15 minutes.
  • STEP 7.In a separate pan, heat ghee and fry the sambar powder until aromatic. Add it to the sambar and mix well.
  • STEP 8.Garnish with coriander leaves and serve hot with rice or idli.

  • You can adjust the spice level according to your preference.
  • Adding a pinch of asafoetida (hing) enhances the flavor of the sambar.
