Make a batter of gram flour, rice flour, turmeric, salt, sugar, kashmiri red chili powder and water. Bring it to the perfect consistency and keep aside.
Cut brinjals into long slices, wash them under running water and marinate with salt.
Cooking Directions
Take a deep-bottomed pan and heat some oil in it.
Wait for the oil to become hot enough for frying.
Dip the marinated brinjals in the batter and fry them one by one in the oil.
Once the brinjals are crispy and golden, remove them from the kadai and keep on a paper towel to drain the excess oil.
