STEP 1.Heat 1 tbsp oil until very hot and pat beef with dry towels then sprinkle salt and pepper.
STEP 1.Brown beef aggressively in 2 batches, add more oil
STEP 2.Add garlic and onion, cook for 2 minutes
STEP 3.Add carrot and celery,cook for 2 minutes.
STEP 4.Stir in the flour then slowly pour the beef and broth. Add beer, water, tomato soup, bay leaves and thyme, stir well. Then add the beef back.
STEP 5.Cover and cook till bubbly. Takes about 1 hr 15 mins. Add potatoes and peas,simmer for further 20 minutes without lid. Add cooked mushrooms in last 5 minutes.
STEP 6.The soup is ready when the potatoes are cooked and beef tender. Sprinkle parsley and serve with cheese.
