The word 'Nihari' comes from the Arabic word 'Nahar', which means morning. This soothing meat stew is traditionally a breakfast recipe, something people would consume after their first Namaaz. They would pair it with sheermal and indulge in the soup at their own ease, before getting on with the day. It is said that Nihari was popularised in India during the Mughal rule. The conistency of the soup is deliberately kept super thin and smooth, so that it is comforting to the throat. In this recipe the stew is prepared with beef (with bones). The slow cooking ensures that the spices and the butter is infused in every part of the meat, including the bone marrow. A range of spices like nutmeg, shahi jeera, peppercorns, red chilli powder makes the dish rich in its own way.

Ingredients for Beef Nihari Recipe

  • 1/4 kilogram Beef
  • 1.50 piece Green cardamom
  • 1/4 piece Cinnamon
  • 1.25 piece Cloves
  • 1 piece Black cardamom
  • 1/4 piece Star anise
  • 3/4 gram Long pepper
  • 1/2 gram Peppercorns
  • 0.06 teaspoon Nutmeg
  • 0.06 teaspoon Mace
  • 1.75 gram Fennel seeds
  • 1.25 gram Coriander seeds
  • 1 gram Cumin seeds
  • 0.13 teaspoon Shah jeera
  • 0.13 teaspoon Ajwain
  • As required Turmeric powder
  • 3/4 gram Red chilli powder
  • 2 gram Kashmiri red chili
  • 2.50 gram Ginger powder
  • 3 gram Ginger paste
  • 2 gram Garlic paste
  • As required Cooking Oil
  • 1 piece Bay leaves
  • As required Salt
  • As required Hot water
  • 2.50 gram Whole wheat flour with water

Steps To Prepare

  • STEP 1.Dry roast green cardamom ,cinnamon,cloves ,black cardamom,star anise,long pepper,peppercorns ,nutmeg ,mace ,fennel seeds ,coriander seeds ,cumin seeds ,shah jeera,ajwain. Grind into powder.
  • STEP 2.Marinate the beef with turmeric powder,red chilli powder,kashmiri red chili ,ginger powder,ginger paste,garlic paste and the mixed spices powder

Cooking Directions

  • STEP 1.Heat a heavy-bottomed pot with oil
  • STEP 2.When the oil starts bubbling, grab the vessel with marinated meat.
  • STEP 3.Drop the marinated meat in hot oil and fry
  • STEP 4.Add bay leaves, salt and hot water to the pot
  • STEP 5.Allow to simmer gently for four hours or the time till beef seperates from bones.
  • STEP 6.Take out 2 tbsp oil from the curry
  • STEP 7.Next, add wheat flour paste and mix well.
  • STEP 8.Take the bone marrow out from the bone and mix in with the curry.
