Directions: Beef Kofta With Saffron Yoghurt Recipe

Cooking Directions

  • STEP 1.In a large bowl, combine ground beef, breadcrumbs, onion, garlic, cumin, coriander, paprika, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  • STEP 2.Shape the mixture into small oval-shaped koftas, about 2 inches long. Thread the koftas onto skewers.
  • STEP 3.Preheat a grill or grill pan over medium-high heat. Brush the koftas with olive oil and grill for about 8-10 minutes, turning occasionally, until they are cooked through and nicely charred.
  • STEP 4.Meanwhile, prepare the saffron yoghurt sauce. In a small bowl, combine Greek yoghurt, saffron threads, lemon juice, garlic, salt, and pepper. Mix well until the saffron is evenly distributed.
  • STEP 5.Serve the beef koftas hot off the grill with a generous dollop of saffron yoghurt sauce on the side. Garnish with fresh herbs, such as parsley or mint, if desired.
  • STEP 6.Enjoy the Beef Kofta with Saffron Yoghurt as a main course with rice or flatbread, or as part of a mezze platter. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

Cooking Tips

  • For extra flavor, you can add finely chopped fresh herbs like parsley or cilantro to the kofta mixture.
  • If using wooden skewers, soak them in water for about 30 minutes before threading the koftas to prevent them from burning on the grill.
  • To make the saffron yoghurt sauce even more vibrant, you can steep the saffron threads in warm milk for a few minutes before adding them to the yoghurt.

Storage and Serving

  • Leftover beef koftas can be stored in an airtight container in the refrigerator for up to 3 days.
  • To reheat, place the koftas in a preheated oven at 350°F (175°C) for about 10 minutes, or until heated through.
  • Serve the beef koftas with saffron yoghurt sauce as a main course with rice or flatbread, or as part of a mezze platter.
