This isnt our first enchilada casserole and it probably wont be our last, but it is one that im particularly fond of thanks to how beefy, saucy, and cheesy it is. Its comfort food through and through, and its the kind thats easy to whip up on any hectic weeknight since theres very little prep work to worry about the oven does most of the work for you and you still get to sit down to a hearty, zesty, and delicious dinner.
