  • STEP 1.In a blender, combine grated coconut, yogurt, green chilies, cumin seeds, and salt.
  • STEP 2.Blend until smooth and creamy.
  • STEP 3.Heat oil in a pan and add mustard seeds and curry leaves.
  • STEP 4.Once the mustard seeds start to splutter, add the blended coconut mixture to the pan.
  • STEP 5.Cook for a few minutes, stirring occasionally.
  • STEP 6.Add the chopped Malabar spinach to the pan and mix well.
  • STEP 7.Cook for another 5-7 minutes, or until the spinach is wilted and cooked.
