Ingredients for Barnyard Millet Cutlets Recipe

  • 33.33 grams barnyard millet
  • 33.33 grams Potato boiled
  • 10 grams Beans Boiled
  • 10 grams carrots boiled
  • 16.67 grams Onion finely chopped
  • 1 pieces Green chillies finely chopped
  • 0.33 tsp Ginger chopped
  • 0.83 teaspoon Coconut oil
  • 0.83 teaspoon Salt
  • 0.33 tsp jeera
  • 0.67 tbsp Coriander leaves chopped
  • 0.67 teaspoon Flax seeds powder
  • 0.33 tbsp Curd
  • 0.17 tsp Turmeric powder
  • 0.33 tsp Chat masala
  • 0.33 tsp Garam masala
  • 0.17 tsp Red chilli powder
  • as required Oil for shallow/deep frying

Directions: Barnyard Millet Cutlets Recipe

  • STEP 1.Put millets in a fine strainer and Wash.
  • STEP 2.Allow the Millet to soak for 6 hours or overnight in water so that the millets are just under water.
  • STEP 3.Heat 200 ml of water and add ½ tsp of oil and ½ tsp of salt. Add soaked millet to the boiling water. Reduce the heat and close with a lid. Allow the Millets to cook for 8 to 10 minutes. When a little water is still left, switch off and close with a lid for 10 minutes. Fluff the Millet with a fork and allow to cool for 15 minutes.
  • STEP 4.In a small bowl add flax seed and curd. Mix it nicely and leave it for atleast 10 minutes.
  • STEP 5.Boil Carrot and beans and keep aside.
  • STEP 6.In the meanwhile, add Oil in a Pan add Jeera. When it crackles add ginger, green chillies and Onion. Saute for 5 minutes with 2 tsp of salt.
  • STEP 7.Add boiled Carrots and beans. Saute for two minutes and then add Turmeric powder, chilli powder, chat Masala, Garam masala. Mix well and add Potatoes nicely mashed.
  • STEP 8.Now add the cooled millets. Add the Flax seed and Curd mixture. Sprinkle the coriander leaves.
  • STEP 9.Transfer everything to a big plate and allow it to thoroughly cool. Mix well to incorporate all the spices, vegetables and the millets.
  • STEP 10.Ale lemon size balls out of the mixture, flatten and shallow fry in a hot skillet. (Can also be deep fried, if you are not health conscious). Gently flip over and fry both sides to golden colour.
  • STEP 11.Serve hot with Green Chutney.
  • STEP 12.Enjoy yummy Cutlets.
