  • STEP 1.First, prepare the bamboo shoots by peeling off the tough outer layers and cutting them into thin slices.
  • STEP 2.Next, heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Let them splutter.
  • STEP 3.Add chopped onions, ginger, and garlic to the pan and sauté until the onions turn golden brown.
  • STEP 4.Now, add the sliced bamboo shoots and cook for a few minutes until they become tender.
