Cooking Directions

  • STEP 1.In a blender or food processor, combine ginger, garlic, turmeric, chili, shallots, and lemongrass. Blend until a smooth paste forms.
  • STEP 2.Heat oil in a large pot or Dutch oven over medium heat. Add the spice paste and cook for 2-3 minutes, until fragrant.
  • STEP 3.Add the pork pieces to the pot and stir to coat them with the spice paste. Cook for another 2-3 minutes.
  • STEP 4.Pour in the coconut milk and water, and bring the mixture to a simmer. Reduce the heat to low, cover the pot, and let it simmer for 2-3 hours, or until the pork is tender.
  • STEP 5.Once the pork is tender, remove the lid and continue cooking for another 10-15 minutes to thicken the sauce.
