STEP 1.1.Take all the dry ingredients mentioned above in a bowl and mix well.
STEP 2.2. Toss the butter in the flour mix .
STEP 3.3.Then start to rub the butter into the flour till the mixture attains a crumbly texture.
STEP 4.4. To the flour mixture , then add 3 tablespoons of milk or more, if needed, to form a tough dough .
STEP 5.5. Simply bring the mixture together to knead a dough.
STEP 6.6.Refrigerate the dough for 15 minutes.
STEP 7.7. Then prepare the filling of the date rolls . For that take 1/2 teaspoon out of the 1/4 cup powdered sugar and add to 1/2 cup of seedless dates and make a paste of it .
STEP 8.8.Then divide the date paste into six portions or more as per the quantity of the date paste .
STEP 9.9.Roll the date paste into thick logs .
STEP 10.10.Divide the chilled Pastry dough into 6 portions or more into a round shape.
STEP 11.Work with one dough at a time and refrigerate others .
STEP 12.12.since The Pastry dough is crumbly. It will get sticky. So work quickly and gently.
STEP 13.13.Flatten it a little upon a parchment paper and place another parchment paper on the top and be careful to make the edges thick and not thin and the middle bulky.
STEP 14.14.Change direction of rolling to maintain the thickness of the pastry sheet .
STEP 15.Place the date paste roll on the pastry sheet and wrap .
STEP 16.Flatten the pastry edge against the date paste .
STEP 17.Continue the roll - over till completely wrapped .
STEP 18.Simply pull off the parchment sheet and trim off the edges and fold the other side over and merge the pastry.
STEP 19.19.If any cracks, use your fingers to blend and fix it .
STEP 20.20.In order to bake it , Preheat the oven at 180°C.
STEP 21.21.Bake the Date Rolls at 180°C for 12 minutes or till slightly golden brown.
STEP 22.22.Once baked, let them cool on the counter to room temperature.
