Cooking Directions

  • STEP 1.In a mixing bowl, combine gram flour, yogurt, ginger-green chili paste, turmeric powder, salt, and sugar.
  • STEP 2.Add water gradually to make a smooth batter.
  • STEP 3.Let the batter rest for 30 minutes to ferment.
  • STEP 4.Preheat the oven to 180°C (350°F).
  • STEP 5.Grease a baking dish with oil and pour the batter into it.
  • STEP 6.Bake for 20-25 minutes or until the dhokla is golden brown and cooked through.
  • STEP 7.Remove from the oven and let it cool for a few minutes.
  • STEP 8.Cut into squares or diamonds and serve with green chutney or tamarind chutney.

Storage and Serving

  • Store the baked dhokla in an airtight container in the refrigerator.
  • Reheat in the microwave or steam before serving to regain the soft and spongy texture.
