A delightful blend of Salt fish sauted with onions, garlic, tomatoes and thyme , enjoyed in the caribbean countries. These are The Best Trinidad Style Fry Bake, you will ever make. They are so fluffy and airy, just waiting to be filled with your salt-fish or your well seasoned fried shark. Fry Bake was eaten a lot in our household on a Saturday morning with salt-fish, fried eggs , corn-beef or even vienna sausage. Fried Bake or Fry bake is a very popular weekend breakfast food in Trinidad, but today it is sold as a street food, made very popular by Maracas Bay Village, Saint George, Trinidad And Tobago.

Ingredients for Bake And Saltfish Recipe

  • As required Bakes
  • 3.50 cup All purpose flour
  • 1/2 cup all purpose flour for kneading
  • 4.50 teaspoon baking powder
  • 1/2 teaspoon Salt
  • 0.33 cup white sugar
  • 2 tablespoon unsalted butter, softened, but not melted
  • 1.33 cup water, more as needed
  • As required Oil For Frying
  • As required Saltfish
  • 570 gram boneless, skinless, salted white fish such as pollock or cod
  • 1/2 cup yellow onion, chopped
  • 3 No.s large garlic cloves, minced
  • 1 No.s wiri wiri pepper or scotch bonnet
  • 1/4 cup green pepper, finely diced
  • 1 sprig Thyme
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Paprika
  • 1/4 teaspoon garlic powder
  • 1 cup fresh tomato, chopped
  • 1 teaspoon tomato paste
  • 2 sprig scallions
  • As required Salt
  • 6 tablespoon oil for cooking

Directions: Bake And Saltfish Recipe

step 1

  • STEP 1.For Bake- In a bowl take flour, baking powder, sugar and salt together.

  • STEP 1.Add in some butter and water to it and make a firm dough. Make small balls and cover them with dry flour. Cover with a damp cotton cloth and let them sit for an hour.

  • STEP 1.Heat oil in a pan and fry these dough balls until they turn golden brown from all the sides.

  • STEP 1.For Saltfish- Boil the saltfish in a pot and shred it using a fork.

step 5

  • STEP 1.Heat some oil in a pan and saute garlic, onions, peppers until the onions become translucent. Add shredded fish and season with garlic and pepper.

step 6

  • STEP 1.Add chopped tomatoes, tomato paste and scallions to the pan and mix well. Cook for 5-6 minutes and serve.
