A delightful combination of brinjals and tomatoes with spices and fresh cream, the Baingan Musallam has a luscious texture and mouth-watering flavour. The Baingan Musallam Recipe, is a delicious brinjals/eggaplnt that is simmered and cooked in a spicy and tangy tomato gravy. The addition of cream and along with the spices make it a rich and delicious Mughali dish. You can either use small brinjal and deep fry them, or like we have done, cut them into long wedges and pan roast them, making it a healthier alternative.

Ingredients for Baingan Musasalam Recipe

  • 3 cup eggplant cubes
  • As required Cooking oil for deep frying
  • 4 tablespoon Ghee
  • 1 teaspoon cumin seeds
  • 1 cup finely chopped onions
  • 2 teaspoon ginger garlic paste
  • 1 teaspoon chili powder
  • 2 teaspoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1.50 cup chopped tomatoes
  • 1/4 cup Tomato Puree
  • 1/2 teaspoon Sugar
  • As required Salt
  • 2 tablespoon Garnish chopped coriander

Directions: Baingan Musasalam Recipe

step 1

  • STEP 1.Start by heating some oil on a non-stick pan, then add the eggplant cubes and deep-fry the eggplant cubes on medium flame. Once they turn golden brown, take them out on a kitchen paper.

step 2

  • STEP 2.Add the ghee on the remaining oil, then add the cumin seeds and saute them for a few seconds on medium flame. Then add the onions and saute them until they start changing color, it might take about 5mins.

  • STEP 3.Now add the ginger-garlic paste, chili powder, coriander powder, turmeric, a cup of water and mix well. Cook them on medium flame for 2 minutes, keep stirring occasionally to prevent burning.

  • STEP 4.Then add the tomatoes, mix thoroughly and cook them on medium flame for 5mins, keep stirring now and then.

  • STEP 5.Add the tomato puree, sugar, fresh cream and salt, adjust according to your taste. Cook for 2mins on medium flame. Now add the fried eggplant cubes, mix well and let it cook on medium flame for 2 minutes, while stirring occasionally.

step 6

  • STEP 6.Once done, garnish it with some chopped coriander leaves. And voila you mughlai baigan is ready.
