  • STEP 1.Start by washing and chopping the eggplant into small cubes.
  • STEP 2.Heat oil in a pan and add cumin seeds and asafoetida.
  • STEP 3.Add chopped onions and cook until they turn golden brown.
  • STEP 4.Add ginger-garlic paste and cook for a minute.
  • STEP 5.Add chopped tomatoes and cook until they become soft.
  • STEP 6.Add turmeric powder, red chili powder, coriander powder, and salt.
  • STEP 7.Add the chopped eggplant and fenugreek leaves.
  • STEP 8.Cover and cook until the eggplant is tender.
