Directions: Baileys Chocolate Cake Recipe

Cooking Directions

  • STEP 1.Preheat the oven to 180°C (350°F). Grease and flour two 9-inch round cake pans.
  • STEP 2.In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  • STEP 3.In another bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, followed by the Baileys Irish Cream and vanilla extract.
  • STEP 4.Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
  • STEP 5.Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  • STEP 6.Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  • STEP 7.Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
  • STEP 8.To make the ganache, heat the cream in a saucepan until it begins to simmer. Remove from heat and stir in the chocolate until smooth and melted. Stir in the Baileys Irish Cream.
  • STEP 9.Let the ganache cool and thicken slightly before using it to fill and frost the cake.
  • STEP 10.Place one cake layer on a serving plate and spread a layer of ganache on top. Place the second cake layer on top and frost the entire cake with the remaining ganache.
  • STEP 11.Garnish with chocolate shavings, if desired. Chill the cake in the refrigerator for at least 1 hour before serving.

Cooking Tips

  • For a stronger Baileys flavor, brush the cooled cake layers with additional Baileys before filling and frosting.
  • Make sure to let the ganache cool and thicken slightly before using it to frost the cake for a smoother and more stable frosting.
  • To make chocolate shavings, use a vegetable peeler to shave a block of chocolate.

Storage and Serving

  • The cake can be stored in an airtight container in the refrigerator for up to 3 days.
  • Bring the cake to room temperature before serving for the best texture and flavor.
  • Serve slices of the cake on dessert plates and enjoy!
