Baingan masala or Brinjal masala is a popular eggplant recipe in the North region of India. This recipe consists of curry with the base of onion and tomato. It is a dish that can be served for lunch or for dinner along with rotis, parathas, puris or even steamed rice.

Ingredients for Baigan Masala Recipe

  • As required Soya oil/any cooking oil/ghee
  • As required Asafoetida
  • 4 tender and small brinjal
  • 1 teaspoon cumin seeds
  • 3-4 garlic cloves
  • As required Ginger
  • As required Green chili
  • As required Peanuts
  • 1 onion finely chopped
  • As required Salt
  • 1 teaspoon Kashmiri chili powder
  • 1/2 teaspoon Turmeric powder
  • As required Garam Masala
  • 1/2 teaspoon cumin powder
  • 1 teaspoon coriander powder

Directions: Baigan Masala Recipe

step 1

  • STEP 1.Firstly, take small and tender brinjal and cut x at the bottom. Make sure to check there are no worms in it. Wash it well.

  • STEP 2.Coat the inside of the brinjal with turmeric and salt. Now in a pan, take 3-4 tbsp of oil and fry the brinjal evenly on a medium flame. The brinjal must be cooked at least 50-60%.

  • STEP 3.For the gravy, we will roast a handful of peanuts, cool the peanuts down after roasting, and grind them.

  • STEP 4.Also add the chopped onion, ginger, 3-4 garlic cloves, and chilies in a grinder and make a smooth paste.

  • STEP 5.Heat 3 tbsp mustard oil in a pan, add 1tsp cumin seed and saute well.

  • STEP 6.Add the spices- turmeric, red chili, salt to taste, cumin powder, and coriander powder, saute them on a low flame.

step 7

  • STEP 7.Now add the onion ginger-garlic paste and mix them well with the masala. Cover it for and let it cook.

  • STEP 1.Add the roasted peanut powder and saute them. Add more water, and once it comes to a boil, then add the fried brinjal.

  • STEP 8.Coat the brinjal nicely with the masala, then cover it and let it cook for 8-10mins in low flame.

  • STEP 9.Stir the brinjal occasionally. When the brinjal is cooked from the inside, add ½ tsp of garam masala.

step 12

  • STEP 10.And your baingan masala is ready. Enjoy it with roti.
