  • STEP 1.Start by boiling the eggplant until it becomes tender. Once boiled, remove the skin and mash the flesh.
  • STEP 2.In a pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  • STEP 3.Add ginger-garlic paste and cook for a minute. Then, add chopped tomatoes and cook until they turn soft and mushy.
  • STEP 4.Add the mashed eggplant to the pan and mix well. Cook for a few minutes to allow the flavors to blend.
  • STEP 5.Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for another 5 minutes.
