A middle eatern dish made from roasted eggplant and flavoured with olive oil, tahini, garlic and other seasonings.Baba ganoush is similar to hummus, but it calls for grilled or roasted eggplant instead of chickpeas. Both dips originated in the Eastern Mediterranean, and they’re often served together with pita bread and raw, crisp veggies.

Ingredients for Baba Ganoush Recipe

  • 1 Eggplant large Nos
  • 2 tablespoon Tahini
  • 1 Juice of lemon
  • bunch A parsley
  • 3 Garlic Cloves
  • As required Olive oil
  • As required Salt
  • 1 teaspoon Black peppercorns
  • As required Pita chips for serving

Directions: Baba Ganoush Recipe

step 1

  • STEP 1.1to roast the eggplant on the stove top, place the eggplant on the flame. Use tongs to turn the eggplant every 5 minutes or so till the entire skin is charred and crispy. This will take 10 to 15 minutes. The flesh will also soften. Remove from the heat and keep aside to cool.

step 2

  • STEP 2.2once the eggplant is cool, peel off the skin. Cut off the stalk and using a knife chop the flesh and mince it fine.

step 3

  • STEP 3.3finely chop/ mince 3 cloves garlic and 1 small onion (optional).chop a small bunch of parsley.

step 4

  • STEP 4.4in a mixing bowl add the minced eggplant, chopped garlic cloves, chopped parsley and 2 tbsp of tahini. Stir to combine all the ingredients.

step 5

  • STEP 5.5add a generous drizzle of olive oil and juice of 1 lemon. Add 1 tsp freshly pounded black peppercorns and stir

step 6

  • STEP 6.6baba ganoush is ready to be served. Transfer to a serving bowl and garnish with chopped parsley. Serve with pita chips.
