  • 1/5 tablespoon Oil
  • 1/10 teaspoon Mustard Seeds
  • 1/10 teaspoon Urad Dal

  • 1/10 cup Grated Coconut
  • 1/5 teaspoon Cumin Seeds
  • 1/2 En Chilies
  • 1/5 tablespoon Ghee
  • as needed Fresh Coriander Leaves For Garnish

Cooking Directions

  • STEP 1.Wash and chop the avarakkai into small pieces.
  • STEP 2.In a pan, heat oil and add mustard seeds, urad dal, and curry leaves. Let them splutter.
  • STEP 3.Add the chopped avarakkai, turmeric powder, and salt. Cook until the beans are tender.
  • STEP 4.In a blender, grind coconut, cumin seeds, green chilies, and a little water to make a smooth paste.
  • STEP 5.Add the coconut paste to the cooked beans and mix well. Cook for a few more minutes.
  • STEP 6.In a separate pan, heat ghee and fry the grated coconut until golden brown. Add it to the kootu for garnish.
  • STEP 7.Serve the Avarakkai Poricha Kootu hot with steamed rice or roti.

Cooking Tips

  • Make sure to cook the avarakkai until it is tender but not mushy.
  • Adjust the spice level by adding more or fewer green chilies according to your preference.
  • You can add a pinch of asafoetida (hing) for additional flavor.
  • For a variation, you can also add cooked toor dal to the kootu.
