  • 3 tablespoon Oil
  • 3 tablespoon Garlic minced
  • 2 teaspoon Salt
  • 1 tablespoon Sichuan peppercorn powder
  • As required Sesame oil for preserving

How to Make Authentic Szechuan Sauce For Dumplings Recipe

STEP 01

Wash and dry 180 gms red chillies.

Roughly cut 180 g washed and dried red chillies roughly into chunks.

Transfer to a blender and blend till coarse in texture. Ensure that there are no large chunks. Set aside.

In a small saucepan heat 3 tbsp vegetable oil. Add 3 tbsp minced garlic .

Stir in medium heat for 2 minutes.

STEP 01

Then add the roughly blended chilli paste and stir for 3 minutes.

Next add 2 tsp salt and 1 tbsp Sichuan peppercorn powder and mix to combine well.

By this time the garlic, chilli and peppercorns should become fragrant. Turn off the heat.

Let the sauce cool completely to room temperature.

STEP 01

Transfer it to a jar and pour enough sesame oil over it to cover the chilli paste level. Schezuan sauce is ready.
