Authentic KHANDESHI KALA MASALA CHICKEN CURRY Recipe

This is maharashtrian chicken recipes (Khandeshi Chicken curry) & I will teach you how to make chicken curry mumbai style (black masala chicken curry). Bombay style chicken curry is very delicious and loved by all.
Ingredients for Authentic KHANDESHI KALA MASALA CHICKEN CURRY Recipe
As Required For masala
40 gms dry coconut
0.80 g Medium size whole Onion
As Required For wet masala
0.60 Pieces Black cardamom
1.60 Pieces 8-10 cloves
1/5 tbsp Black peppercorns
1/5 g Star anise
1/5 inch Cinnamon stick
1/5 tsp Cumin seeds
1/10 tsp ½ tsp fennel seeds
1/10 tbsp ½ tbsp stone flower daghal ke phool
1/5 cup Coriander seeds
1/10 cup ½ cup fresh coarindar leaves
0.80 g 4-5 Garlic peeled
1/5 inch Ginger sliced
1/5 g Tomato roughly chopped
to taste Salt
1/5 tsp Turmeric powder
1/5 tsp Degi red chilli powder
0.08 tsp ¼ tsp hing
As Required For marination
1/5 kg Chicken
As Required (thigh & drumsticks cuts)
1/5 tsp heaped tsp Degi red chilli powder
1/10 tsp ½ tsp turmeric powder
1/5 tbsp Coriander powder
to taste Salt
1/5 tbsp 1 ½ tbsp oil
As Required For Cooking Masala
0.40 tbsp Oil
0.06 cup ⅓ cup prepared wet masala
1/5 tbsp Gram flour
0.08 cup ¼ cup water
As Required For Cooking Chicken
0.40 tbsp Oil
1/5 A Stem Bay leaf
1/5 g Medium size onion chopped
1/5 g reen chilli slit into half
to taste Salt
As Required Marinated chicken
1/10 cup ½ cup water
As Required Cooked Masala
As Required Hot water
As Required For garnish

Directions: Authentic Khandeshi Kala Masala Chicken Curry Recipe
STEP 1.For Masala
STEP 2.Put the onions on a direct flame until they are dark or black in colour. Turn & char them from all sides. Similarly, char the dry coconut from all sides until they are dark.
STEP 3.Slightly remove the over charred bits from the coconut, (optional)
STEP 4.For Wet Masala
STEP 5.In a pan, add coriander seeds and dry roast on low flame.
STEP 6.Add black cardamom, cloves, black peppercorns, star anise.
STEP 7.Add cinnamon stick, cumin seeds, fennel seeds, mace, stone flower dry roast on low flame until the spices turn aromatic.
STEP 8.Add sliced dry roast coconut and roast it well.
STEP 9.In a bowl, add roasted peeled onion cut into half, coriander leaves and the dry roast spices.
STEP 10.Add garlic cloves, ginger, tomato, salt to taste, turmeric powder, degi red chilli powder.
STEP 11.Add asafoetida and transfer this into a grinder jar and grind it into a smooth paste.
STEP 12.Keep aside for further use.
STEP 13.For Marination
STEP 14.In a bowl, add chicken, degi red chilli powder, turmeric powder, coriander powder.
STEP 15.Add salt to taste, oil and marinate well and keep aside for further use.
STEP 16.For Cooking Masala
STEP 17.Heat oil in a kadai, add prepared wet masala and saute it well.
STEP 18.Keep sauteing until oil separates, make sure masala should not burn to the bottom.
STEP 19.Add gram flour and saute it well. Now add little water and cook masala till oil separates.
STEP 20.For Cooking Chicken
STEP 21.In a large pot, add oil, once it’s hot add bay leaf, onion, green chilli and saute it well.
STEP 22.Add salt to taste, marinated chicken and cook on medium flame.
STEP 23.Add water and cover it with the lid and let it cook for 5 minutes.
STEP 24.Add earlier cooked masala and mix it well, add hot water and bring to a boil.
STEP 25.Again cover it with the lid and cook until the chicken is tender and completely cooked well.
STEP 26.Simmer until the gravy releases oil on top.
STEP 27.Garnish it with coriander sprig and serve hot with jowar bhakri.
