  • 0.06 cup Chana Dal
  • 0.06 cup Urad Dal
  • 0.06 teaspoon Fenugreek Seeds
  • 1/4 cup Grated Bottle Gourd
  • 0.13 cup Grated Carrot
  • 0.13 cup Chopped Spinach
  • 1/4 tablespoon Grated Ginger
  • 1/4 tablespoon Green Chili Paste
  • 0.13 teaspoon Turmeric Powder
  • 1/4 teaspoon Red Chili Powder
  • As required Salt To Taste
  • 0.13 cup Yogurt

Cooking Directions

  • STEP 1.In a bowl, soak a mixture of rice, lentils, and fenugreek seeds for 4-5 hours.
  • STEP 2.Drain the water and grind the soaked mixture into a coarse batter.
  • STEP 3.Add grated bottle gourd, grated carrot, chopped spinach, grated ginger, green chili paste, turmeric powder, red chili powder, salt, and yogurt to the batter. Mix well.
  • STEP 4.Cover the batter and let it ferment overnight or for at least 8 hours.
  • STEP 5.Heat a non-stick pan and add oil. Spread the batter evenly in the pan.
  • STEP 6.Cover the pan and cook on low heat for 10-12 minutes or until the bottom is golden brown and crispy.
  • STEP 7.Flip the handvo using a plate or spatula and cook the other side for another 10-12 minutes.
  • STEP 8.Once cooked, remove from the pan and let it cool slightly before slicing.
  • STEP 9.Serve the handvo with chutney or yogurt.
  • STEP 10.Store any leftovers in an airtight container in the refrigerator for up to 2 days.

  • You can add other vegetables like grated zucchini or chopped bell peppers for added flavor and nutrition.
