Aubergine chicken parmigiana is another variation popular in the united states. It is often served as an entree. It is also served as a side dish or on top of pasta. I am sharing my recipe for this authentic dish .

  • 1 boneless skinless chicken thighs or breasts cut into half
  • 1/2 inch large aubergine or eggplant thinly sliced into roundels of 1/4 thickness
  • 1 teaspoon italian seasoning for seasoning chicken
  • 1/2 teaspoon ground black pepper for seasoning chicken
  • 1/4 teaspoon cayenne for seasoning chicken
  • As required Salt
  • 1/2 cup panko breadcrumbs seasoned with salt and 1 tsp chilly powder or black pepper
  • 1/4 cup All purpose flour
  • 1 large eggs
  • 0.17 cup grated parmesan cheese
  • 0.17 cup shredded mozzarella cheese
  • As required oil for grilling and baking chicken and aubergine
  • As required Fresh green lettuce and chopped cilantro or basil or parsley for garnishing
  • As required For hot garlic tomato sauce
  • 1 plum tomatoes
  • 0.13 cup chopped onions
  • 1/2 tablespoon olive oil
  • 2-3 garlic cloves smashed and finely chopped
  • 1/4 knob ginger finely chopped or grated
  • 1/2 jalapeno peppers finely chopped
  • 2-3 green chillies to add spice
  • 1/2 tablespoon chopped fresh basil leaves
  • 1/2 teaspoon chopped fresh mint leaves
  • 1/2 tablespoon distilled white vinegar
  • 1/2 cup Water
  • 1/2 teaspoon ground black pepper
  • As required Salt
