How to Make Aubergine And Green Pepper Stir Fry Recipe
In a large mixing bowl add 2 large aubergines peeled and cut into bite size wedges.
Add 4 tbsp cornflour and mix and toss to ensure that all the pieces are well coated.
Heat sufficient oil in a pot for deep frying the aubergine.
When the oil is hot add the pieces of aubergine and deep fry for 6 minutes till the vegetable is lightly golden.
Use a slotted spoon to remove the aubergine and drain off any excess oil.
Heat 1 tbsp oil in a pan and add 3 cloves finely chopped garlic, ½ cm ginger finely chopped, 2 finely chopped spring onions and fry for a few seconds.
Then add 2 tomatoes cut into bite size pieces and 1 red pepper cut into bite size pieces. Stir fry for 1 minute.
Next add the pieces of fried aubergine, 1 tbsp soy sauce, 1 tbsp sugar and salt to taste. Stir well to combine flavours.
Stir fry for 1 minute. Turn off the heat.
Transfer the aubergine and green pepper stir fry to a bowl and serve hot.
