  • 350 gram Chicken Breast
  • 2 No.s Spring onions
  • 2 No.s Lemon grass
  • 2 No.s Red chilli
  • 10 gram Galangal
  • 4 No.s Lime leaves
  • 25 gram Coriander
  • 80 gram Mushrooms
  • 4 tablespoon Lemon juice
  • 1.50 tablespoon Fish sauce
  • 2 tablespoon Chili Oil
  • 400 milliliter Coconut milk
  • 1.50 tablespoon Sugar
  • 800 milliliter Chicken Stock

Directions: Asian Style Chicken Coconut Soup Recipe

step 1

  • STEP 1.1 in a wok add 800 ml chicken stock, 2 thinly sliced lemon grass, 10 gm thinly sliced galangal, 4 lime leaves cut into halves, stems of 25 gm coriander roughly chopped and stir together.

step 2

  • STEP 2.2 bring the stock to a boil, then cover and simmer for 20 minutes.

step 3

  • STEP 3.3 next add 350 gm thinly sliced chicken breast and turn the heat to high.

step 4

  • STEP 4.4 add 1 ½ tbsp fish sauce, 1 ½ tbsp sugar, stir andallow to cook for 5 minutes or until chicken is cooked through.

step 5

  • STEP 5.5 then add 400 ml coconut milk and stir. Add 80 gm mushroom halved or quartered.

step 6

  • STEP 6.6 in a serving bowl add 4 tbsp lemon juice, 2 thinly sliced spring onions, 2 thinly sliced red chilies.

  • STEP 7.7 transfer the contents from the wok to the bowl and stir.

step 8

  • STEP 8.8 garnish with roughly chopped coriander leaves and serve hot.
