  • 1/4 cup Yogurt
  • 1/2 tablespoon Besan
  • 0.13 cup Water

Cooking Directions

  • STEP 1.Peel and chop the ash gourd into small cubes.
  • STEP 2.In a pan, heat oil and add cumin seeds, mustard seeds, and curry leaves. Let them splutter.
  • STEP 3.Add chopped ash gourd, turmeric powder, red chili powder, and salt. Mix well and cook until the ash gourd is tender.
  • STEP 4.In a bowl, whisk yogurt with besan (gram flour) and water to make a smooth paste.
  • STEP 5.Add the yogurt mixture to the cooked ash gourd and mix well. Cook for a few more minutes until the curry thickens.
  • STEP 6.Garnish with fresh coriander leaves and serve hot with rice or bread.
