Ingredients for Arroz Con Pollo Recipe

  • 3.50 teaspoon Salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried cumin
  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 kilogram chicken, cut into 8 serving pieces and skin removed
  • 3 tablespoon vegetable oil
  • 1 No.s small yellow onion, finely diced
  • 1 No.s green bell pepper, diced
  • 1 No.s red bell pepper, diced
  • 1.50 cup long grain rice
  • 2 No.s cloves garlic, finely diced
  • 1.50 cup low salt chicken stock
  • 1/2 cup tomato sauce

step 1

  • STEP 1. combine salt, garlic powder, cumin, black pepper and cayenne in a plastic zip lock bag. Shake it well so the mixture is well combined.

  • STEP 1. put the chicken in the marinated bag and massage it so that the marinate gets coated and the flavours get infused into the chicken.

step 3

  • STEP 1. heat oil in a skillet over high heat and add the marinated chicken and cook it for 6 minutes so it gets evenly brown from all sides.

  • STEP 1. transfer the chicken to a plate and add green peppers, red peppers, onions and 1/2 teaspoon salt to the skillet.

  • STEP 1. cook the vegetables over medium heat while stirring continuously for about 7 minutes. Add rice and garlic to the skillet and cook it for a minute.

  • STEP 1. meanwhile, combine stock, tomato sauce and salt in a bowl.

  • STEP 1. add 1 1/4 cups water and stock mixture to the skillet and stir well.

  • STEP 1. nestle the chicken in the rice by adding juices from the plate.

  • STEP 1. bring your rice to a boil and reduce the heat to medium-low and cover with a lid.

step 10

  • STEP 1.cook this for about 35 minutes so that the chicken is cooked through and the rice is tender.
