Directions: Apple Payesh/apple Kheer/apple Payasam Recipe

Cooking Directions

  • STEP 1.Wash and soak the rice for 30 minutes. Drain the water and set aside.
  • STEP 2.In a large pan, heat ghee and add the soaked rice. Saute for a few minutes until the rice turns slightly golden.
  • STEP 3.Add milk to the pan and bring it to a boil. Reduce the heat and let it simmer until the rice is cooked and the milk thickens.
  • STEP 4.Meanwhile, peel and grate the apples. Add the grated apples to the pan and cook for another 5 minutes.
  • STEP 5.Add sugar, cardamom powder, and chopped nuts to the pan. Mix well and cook for a few more minutes.
  • STEP 6.Remove from heat and let it cool. Serve chilled, garnished with more chopped nuts.

Cooking Tips

  • Make sure to use a heavy-bottomed pan to prevent the milk from sticking to the bottom.
  • You can adjust the sweetness according to your taste by adding more or less sugar.
  • For a richer flavor, you can add a few strands of saffron soaked in warm milk.
  • You can also add a pinch of nutmeg powder for extra flavor.
  • If you prefer a smoother texture, you can blend the cooked rice and apples before adding the sugar and nuts.

Storage and Serving

  • Apple Payesh can be stored in the refrigerator for up to 2 days.
  • Serve chilled as a dessert after a meal or as a festive sweet.
  • Garnish with additional chopped nuts before serving for added crunch and flavor.
