  • 1/5 liter Water
  • 10 gram Sugar
  • 1/2 gram Active Dry Yeast

  • STEP 1.Cut the stale bread into small cubes and place them in a large bowl.
  • STEP 2.Boil water and pour it over the bread cubes, making sure they are fully submerged.
  • STEP 3.Cover the bowl with a clean cloth and let it sit at room temperature for 24 hours to allow the bread to ferment.
  • STEP 4.After 24 hours, strain the liquid into a clean container, discarding the bread solids.
  • STEP 5.Add sugar and yeast to the liquid, stirring until dissolved.
  • STEP 6.Cover the container and let it ferment for another 2-3 days at room temperature.
  • STEP 7.Once the fermentation is complete, strain the liquid again to remove any sediment.
  • STEP 8.Chill the kvas in the refrigerator for a few hours before serving.
  • STEP 9.Serve the bread kvas cold, optionally garnished with fresh mint or lemon slices.
