Tangy Egg masala in peanut gravy. Ande Ka Salan is a lip smacking gravy made with coconut, sesame seed and peanut base along with tangy tamarind. It is a popular recipe from Hyderabad and makes a great accompaniment with biryanis, pulaos or any Indian bread.

Ingredients for Ande Ka Salan Recipe

  • As required Ingredients for ground masala
  • 2 tablespoon roasted peanut
  • 2 tablespoon sesame seeds
  • 1/4 cup freshly grated coconut
  • 1/2 cup warm water for grinding
  • As required Ingredients for egg masala
  • 6 No.s Eggs hard boiled and halved
  • 1 tablespoon Oil
  • 1/2 teaspoon Mustard seeds
  • 1/4 teaspoon Methi seeds
  • 1/2 teaspoon Cumin seeds
  • 2 No.s Onions finely chopped
  • 1 inch Ginger finely chopped
  • 6 No.s Garlic Cloves Finely Chopped
  • 2 No.s Green chillies slit
  • 1 sprig Curry leaf
  • 1 cup Tomato puree
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 1.50 teaspoon Coriander powder
  • As required Salt
  • 1 cup Tamarind water
  • As required Coriander leaves for garnish A few

Directions: Ande Ka Salan Recipe

step 1

  • STEP 1.Boil 6 eggs. Cool, peel and cut into halves.

step 2

  • STEP 2.1 into a hot pan add 2 tbsp roasted peanut , 2 tbsp sesame seeds. Roast for a minute. Allow to cool.

step 3

  • STEP 3.2 transfer to a grinder jar,add ¼ cup freshly grated coconut and ½ cup warm water. Blend to make a smooth paste.

  • STEP 4.3 into a preheated pan add 1 tbsp oil, ½ tsp mustard seeds, ¼ tsp methi seeds and 1/2 tsp cumin seeds. Allow the seeds to crackle.

  • STEP 5.4 then add 2 finely chopped onions, 1 inch finely chopped ginger, 6 cloves finely chopped garlic, 2 slit green chillies and1 sprig curry leaf. Saute till onions turn golden brown.

step 6

  • STEP 6.5 next add 1 cup tomato puree, ¼ tsp turmeric powder,1 tsp red chilli, 1 ½ tsp coriander powder and salt to taste.

  • STEP 7.6 mix in the ground coconut peanut mixture and 1 cup tamarind water. Stir well to combine all the ingredients.

step 8

  • STEP 8.7 cover and simmer on medium heat for 5 minutes. Add in 6 halved hard boiled eggs and simmer for another 5 minutes. Check salt and adjust. Turn off the heat and stir in chopped coriander leaves.

step 9

  • STEP 9.8 spoon into a serving bowl.
