Amabli is a nutritious, traditional recipe mainly devoured in Southern India. Also known as a salty porridge or summer drink, ambali is prepared using buttermilk, finger millet flour, onion, curry leaves and salt. Ingredients for Ambali Recipe

  • 1 glass Water
  • 1 tablespoon Finger millet flour
  • 1/4 cup Buttermilk
  • As required Salt

Steps to prepare

  • STEP 1.Ambali can be served with dal, sambar, rasam, buttermilk, curries etc. However, hot rasam or sambar shouldn't be added as it kills healthy microorganisms.

  • STEP 1.Add 1 glass of water and salt in medium flame in a pan. Add water. Take a mixing bowl and mix 1tsp of ragi flour with water. Mix until there are no lumps.

  • STEP 1.Let it thicken for 10 minutes. Mix promptly so that no skin is formed and turn off the stove.

step 3

  • STEP 1.Cool completely and add buttermilk and salt, mix everything and serve.

Pro Tip

  • STEP 1.You can also serve this with a pickle.
  • STEP 2.Both asafoetida and onion are optional, but we suggest using one.
  • STEP 3.You can also add milk sugar to make it sweet.
  • STEP 4.To make ambali spicy, you can either add crushed pepper or green chilli (finely chopped)
