Cooking Directions

  • STEP 1.Wash and soak the lentils for 30 minutes.
  • STEP 2.In a pressure cooker, cook the soaked lentils with water, turmeric powder, and salt until soft.
  • STEP 3.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Once they splutter, add chopped onions and sauté until golden brown.
  • STEP 4.Add chopped amaranth leaves, green chilies, and grated coconut. Cook until the leaves wilt.
  • STEP 5.Add the cooked lentils to the pan and mix well. Adjust the consistency by adding water if needed.
  • STEP 6.Simmer for a few minutes and season with salt and pepper.
  • STEP 7.Serve hot with steamed rice or roti.
