Ingredients for Aloo ki Kachori Recipe

  • 1/4 g For dough
  • 1/2 cup maida
  • 1/4 tsp Salt
  • 1/4 tbsp Ghee
  • 1/4 cup water
  • 1/4 g ajwain
  • 1/4 g Oil for deep frying
  • 1/4 g For stuffing
  • 1/2 tsp Oil
  • 1/4 g potato (boiled & mashed)
  • 1/4 tsp Cumin seeds
  • 1/4 tsp Coriander seeds (crushed)
  • 1/4 tsp Fennel seeds _(Crushed)
  • 1/4 g green chilli (finely chopped)
  • 1/4 g Grated ginger
  • 1/4 tsp Turmeric powder
  • 1/4 g Piinch of hing
  • 1/4 tsp Kashmiri red chilli powder
  • 1/4 tsp Garam masala
  • 1/4 tsp Amchur powder
  • 1/2 tsp salt and black salt
  • 1/2 tbsp Chopped coriander leaves

Directions: Aloo Ki Kachori Recipe

  • STEP 1.Firstly, prepare the kachori dough and rest for 20 minutes.
  • STEP 2.Prepare the stuffing by heating oil.
  • STEP 3.Add hing, green chilli, grated ginger and saute for 30 seconds.
  • STEP 4.Now add 1 tsp crushed cumin, coriander and fennel seeds. Saute till it turns aromatic.
  • STEP 5.Keeping the flame on low, add spices and saute.
  • STEP 6.Now add 2 boiled and mashed potatoes.
  • STEP 7.Add black salt and salt and mix well.
  • STEP 8.Finally add chopped Coriander leaves.
  • STEP 9.Aloo stuffing is ready.
  • STEP 10.Now pinch a small lemon sized ball and flatten it.
  • STEP 11.Now scoop 2 tsp of prepared aloo stuffing and place in the centre.
  • STEP 12.Get the edges together and form a bundle.
  • STEP 13.Close the top by pressing and flattening.
  • STEP 14.Furthermore, gently press the edges and flatten to form a poori size.
  • STEP 15.When the oil is medium hot, add prepared kachori and fry.
  • STEP 16.Finally, serve aloo kachori as it is or with Aloo ki chatpati sabzi, green chutney and fried chilli.
