Ingredients for Aloo Dum Biryani Recipe

  • 1/4 cup 1½ Cup Basmati Rice 1 Cup
  • 1/4 tsp 1½ tsp
  • 1/2 inch Cinnamon
  • 1 g Cloves
  • 3/4 g Cardamom
  • 3/4 g Bay leaf
  • As Required FOR POTATO MARINATION
  • 75 g Baby potatoes
  • 1/4 cup ⅓ Cup Curd (Plain Yog
  • 1/4 tsp ¼ tsp
  • 1/4 tsp Salt
  • 1/4 tsp Coriander powder
  • 1/4 tsp ½ tsp g
  • 1/2 tsp Red chili powder
  • 1/4 tbsp Ginger garlic paste
  • As Required For masala
  • 1/2 tbsp Butter
  • 1/4 g Onion sliced
  • 3/4 g reen chili
  • 1/2 g Tomato cubed
  • 2.50 g Mint leaves
  • 1/4 tbsp Coriander leaves
  • 1/2 tbsp Oil
  • 1/4 g other ingredients
  • 1/2 cups 2 Onions Sliced or we can use 2 cups
  • 1/4 cup ½ cup
  • 1/4 cup ½ cup
  • 1/2 tbsp Warm milk
  • 1/4 Pinches Few Strands Saffron Threads
  • 1/2 tbsp Oil

Directions: Aloo Dum Biryani Recipe

  • STEP 1.Soak saffron threads in warm milk and set aside
  • STEP 2.Wash and soak Rice for about 15 mins.
  • STEP 3.FRYING ONIONS
  • STEP 4.Heat 2 tablespoon of oil in a pan. Add onions with pinch of salt and saute onions till they are golden brown. Set this fried onions aside. If you have store bought fried onions, you can skip this step.
  • STEP 5.FRYING POTATOES
  • STEP 6.In the same pan, add oil, add washed, peeled and orange coloured potatoes. Fry the potatoes in low flame till they are golden colour.
  • STEP 7.MARINATION PROCESS
  • STEP 8.Take a mixing bowl. Add curd, salt, turmeric powder, coriander powder, garam masala, red chili powder and ginger-garlic paste and give a good mix
  • STEP 9.Add half of the fried onions to the curd mixture and mix well.
  • STEP 10.Set the marinated mixture aside for about 20 mins.
  • STEP 11.COOKING RICE
  • STEP 12.Bring 5 cups of water to boil in a sauce pan or pressure cooker. Add salt to the water. Add cumin seeds and whole garam masalas (bay leaf, cinnamon, cardamom, cloves)
  • STEP 13.Add washed rice to the boiling water. Cook the rice till its almost 70% cooked.
  • STEP 14.Once the rice is cooked, strain the excess water and set the cooked rice aside.
  • STEP 15.MAKING ALOO MASALA
  • STEP 16.Heat butter in a pan. Add green chili and fry in butter. Add sliced onions and saute onions till translucent.
  • STEP 17.When the Onions are translucent, add tomatoes to the pan and saute tomatoes till they are tender and soft
  • STEP 18.When the tomatoes are cooked, add the marinated mixture to the pan. Cover & Cook the masala till the oil oozes out of the masala and the masala becomes thick.
  • STEP 19.When the masala is cooked, add mint and coriander leaves and mix well. Then switch off the flame.
  • STEP 20.Now the Aloo masala is cooked and rice is almost cooked, lets start layering the biryani.
  • STEP 21.LAYERING BIRYANI
  • STEP 22.Heat a tawa. On top of the tawa, place a heavy bottomed pan. Grease the tawa with ghee all over the inside of the pan. First add one half of the aloo masala to the greased pan. Then add half of the cooked rice and spread it evenly.
  • STEP 23.Then add fried onions and spread it. Also add few mint leaves to the rice layer.
  • STEP 24.Now add rest half of the aloo masala and spread gently. Then add the rest of the rice and spread evenly.
  • STEP 25.Add some more mint leaves and coriander leaves. Also add saffron milk. This will give a natural color to the biryani.
  • STEP 26.DUM COOKING
  • STEP 27.Cover the pan with aluminium foil. Close the pan with a lid. Keep the flame low and cook for about 15 mins. The rice should be fluffy as well as the bottom masala layer should be dry. If not, cook for more mins.
  • STEP 28.SERVING TIME
  • STEP 29.Serve the delicious Aloo Dum Biryani with Raitha of your choice and enjoy the Biryani
