STEP 1.Mix besan, salt and all the spice powders (hing, turmeric powder,mint powder,chaat masala, red chili powder) in a bowl.
STEP 2.Then add boiled, grated potatoes and oil also.
STEP 3.Start mixing and knead into smooth and soft dough without adding any water.somtimes potatoes are so dry in that case you can add 2 tbsp water to make soft dough.
STEP 4.Heat the oil in a pan on medium heat for frying.
STEP 5.Meantime, grease the inside of the sev machine and disc. Please use the disc which has very tiny holes.
STEP 6.Now divide the dough into two portions and fill the sev machine container with one part of the dough and close tightly.
STEP 7.Once oil is hot, drop the sev directly into the hot oil and fry till crisp and slightly golden brown in color.
STEP 8.Then remove it using slotted spatula and keep on paper towel lined plate.
STEP 9.Repeat the same for rest of the dough.
STEP 10.Once sev cools down completely, it is ready to serve.
