Aji de Gallina is a traditional Peruvian dish of Chicken in a mild yellow chilli creamy sauce thickened with bread and ground nuts.

Ingredients for Aji De Gallina Recipe

  • 2 piece chicken breast
  • 4 cup chicken stock
  • 5 piece slices of white bread, without crust
  • 1 can evaporated milk
  • 2 tablespoon vegetable oil
  • 1 No.s small red onion
  • 2 No.s garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon Turmeric
  • 1/2 cup mild yellow chilli paste
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup pecans, finely chopped
  • As required salt/pepper
  • As required To serve
  • 4 No.s boiled potatoes, sliced
  • 2 No.s boiled eggs, halved
  • 1 cup long grain rice
  • 4 No.s black pitted olives, halved
  • As required Parsley
  • As required Sprinkle of finely chopped pecans

Directions: Aji De Gallina Recipe

step 1

  • STEP 1. take the chicken in a pot and add chicken broth to it.

  • STEP 1.Let it boil and then reduce the flame.

  • STEP 1.cover and cook for 20 minutes.

step 4

  • STEP 1. once cooked shred the chicken using forks into bite size pieces.

step 5

  • STEP 1. in another pot boil potatoes in salt water.

  • STEP 1. once the water comes to boil ,cover the pot with a lid and cook for 10-15 minutes.

  • STEP 1. boil your eggs in the same pan as potatoes.

  • STEP 1. soak the bread slices in milk for a few minutes and blend them using a hand blender.

  • STEP 1. heat oil in a pan and saute onions and garlic in it.

  • STEP 1. to this add cumin and turmeric to this and cook for 2 minutes.

  • STEP 1. add chili paste and cook for 3 minutes.

  • STEP 1. take the prepared bread mix and pour it into the pan.

  • STEP 1. give it a nice stir and cook for 5 minutes.

  • STEP 1. gradually add 1 cup stock to this and season with salt and pepper.

  • STEP 1. finally add cooked shredded chicken, pecans and cheese

  • STEP 1.simmer it for 5 minutes .

  • STEP 1. serve it with boiled potatoes, eggs and cookies rice.

  • STEP 1.Garnish with olives, parsley and pecans.
