It's a traditional Bolivian dish that originated in the city of Cochabamba. Pasta is cooked in a meat sauce with tomatoes, red pepper , onions, potatoes and garnished with parsley and green peas.Aji de Fideos is a delicious spicy pasta dish with meat, tomatoes, potatoes, onions and aji (spice) of your choice. A typical feature of this dish is that pasta is toasted separately then incorporated in the sauce and finally cooked together.

Ingredients for Aji De Fideos Recipe

  • 112.50 gram beef chunks
  • 1/4 No.s Potato
  • 1/4 No.s red onion
  • 1/2 cloves garlic
  • 1.25 No.s campari tomatoes
  • 1/4 No.s sweet red pepper
  • 1/4 tablespoon aji panca
  • 1/4 tablespoon Butter
  • 112.50 gram penne pasta
  • As required Salt
  • As required Pepper
  • 1/4 cup frozen peas
  • 1 tablespoon olive oil
  • 1/4 cup Parsley

Directions: Aji De Fideos Recipe

  • STEP 1. Chop the meat into bite size pieces. Season the meat with salt and pepper. heat 2-3 tsp oil in a pan and saute the chopped meat in it until it turns brown.
  • STEP 2.Now add 2 cups of water and let the meat cook at medium heat . In a skillet add some oil and saute onions , garlic , tomatoes and red pepper in it. Add aji panca , bouilion and chopped cilantro to it .
  • STEP 3.Lower the heat , cover the skillet with a lid and let it simmer for a few minutes. Transfer the sauce to the meat pan and give it a nice stir . Add a cup of hot water.
  • STEP 4.Heat some oil in the skittle and cook diced potatoes in it. Add pasta to the skittle and cook it with the potatoes .
  • STEP 5.Once cooked transfer it into the meat pan and let it cook for 10-12 minute . Steam the frozen peas and add to your aji de fideos.
