  • 1/4 cup Black Beans, Rinsed And Drained
  • 0.13 cup Corn Kernels
  • 1/4 teaspoon Cumin
  • 0.13 teaspoon Chili Powder
  • 0.13 teaspoon Salt
  • 3 Egg Roll Wrappers
  • as needed Olive Oil, For Brushing

Directions: Air Fryer Sweet Potato & Black Bean Egg Rolls Recipe

Cooking Directions

  • STEP 1.Preheat the air fryer to 400°F (200°C).
  • STEP 2.In a bowl, mix together the roasted sweet potatoes, black beans, corn, cumin, chili powder, and salt.
  • STEP 3.Place about 2 tablespoons of the filling onto each egg roll wrapper.
  • STEP 4.Fold the sides of the wrapper over the filling, then roll it up tightly.
  • STEP 5.Brush the egg rolls with olive oil.
