An easy stew prepared from egg, spices, tomato paste along with some veggies. This egg sauce recipe might look like a light dish but looks can be deceiving. It is actually very filling and nutritious. It is also beginner-friendly, so you can't go wrong with it. Plum tomatoes, red bell pepper, habanero pepper, onion, and garlic. Use plum (roma) tomatoes for this recipe because they are juicy enough but not too watery.

Ingredients for African Egg Stew Recipe

  • 1 Nos Red Bell Pepper
  • 1/2 Nos Green Bell Pepper
  • 1 teaspoon Salt
  • 1/2 Black pepper
  • 1 teaspoon Curry Powder
  • 2 tablespoon Of Tomato Paste
  • 2 Nos Maggi Cubes
  • 1/2 Nos Thyme
  • As required Olive Oil
  • 8 Nos Tomatoes
  • 1 Nos Large Onion
  • 10 Nos Eggs

Directions: African Egg Stew Recipe

step 1

  • STEP 1.Blend tomato and pepper together. In a bowl crack in eggs and whisk it. Chop green bell pepper. In a pot oil and heat it at medium flame. Add in chopped onions and thyme until translucent. Now add tomato paste and cook for 45 minutes.

step 2

  • STEP 1.Then add blend paste, black pepper, salt, curry powder and seasoning cubes. Stir and cover it for 10 minutes. Now add in egg yolk and cook it for 20 minutes. Add green bell peppers and mix it. Cook it at low flame for 5 minutes. Turn off the flame and serve.
