STEP 1.For the filling, you can choose meat over potatoes if you want.
Cooking Directions
STEP 1.Combine flour, salt, oil and water and knead semi-soft dough.
STEP 2.Cowl with a dump-dress and keep aside to rest for at least half-hour.
STEP 3.Now mix mashed potatoes, cut onions (green and white both), salt, pepper powder, coriander and chilies in a separate bowl and blend well. Keep aside.
STEP 4.Divide the dough and stuff each into equal four parts.
STEP 5.Take one portion and roll it as skinny chapati.
STEP 6.Place one portion of stuffing in the center and unfold it into half.
STEP 7.Fold into half, up over the highest and seal the perimeters.
STEP 8.Repeat the process with the remaining dough and stuffing.
STEP 9.Heat the tawa on medium flame, grease with very little oil and shallow fry the bolani one by one from each side until golden brown and fried.
Storage And Serving Method
STEP 1.Serve hot bolani with Indian radish and a yoghurt dip.
