Long beans is low in fat and offer an excellent source of protein, fiber, folic acid and complex carbohydrates.

Ingredients for Achinga Payar Mezhukupuratti Recipe

  • 2 cup Long beans sliced lengthwise
  • 4 No.s Green chilly split in halves
  • 3/4 cup Chopped shallots
  • 1/4 cup Coconut bits
  • 1/4 teaspoon Turmeric powder
  • As required Salt
  • 2 tablespoon Coconut oil
  • 1/2 teaspoon Mustard seeds
  • 2 Finely chopped garlic pods
  • 1 flakes Dry red chilli tbsp
  • As required Curry leaves a few

Directions: Achinga Payar Mezhukupuratti Recipe

step 1

  • STEP 1.Into a pan add 2 cups sliced long beans, 4 green chilly split in half, ¾ cup of chopped shallots, ¼ cup of coconut bits, ¼ tsp turmeric powder, a pinch of salt and ½ cup of water.

  • STEP 1.Stir all the ingredients and cook for 10 minutes on medium flame with a lid.

  • STEP 1.Turn off the flame and keep it aside after 10 minutes.

  • STEP 1.Set another pan on the stove. Take in 2 tbsp coconut oil and allow it to turn hot.

step 5

  • STEP 1.Drop in ½ tsp mustard seeds. When the seeds splutter add 2 pods of finely chopped garlic, 1 tbsp red chilli flakes and a few curry leaves.

step 6

  • STEP 1.Transfer the cooked long beans and stir cook till the excess water is vaporized.
