Ingredients for Achari Arbi Recipe

  • 3.33 Pieces Arbi
  • 0.33 Cup Beaten fresh curd
  • 0.67 Pieces Tomatoes (pureed)
  • 0.67 Pieces Green Chillies (finely chopped)
  • 0.33 Inch Ginger grated
  • 0.17 Teaspoon Mustard Seeds
  • 0.17 Teaspoon Cumin Seeds
  • 0.17 Teaspoon Carom Seeds
  • 0.17 Teaspoon Fennel Seeds
  • 0.17 Teaspoon Fenugreek Seeds
  • 0.17 Teaspoon Nigella Seeds
  • 0.08 Teaspoon Asaefotida
  • 0.17 Teaspoon Turmeric Powder
  • 0.17 Teaspoon Red Chilli Powder
  • 0.17 Teaspoon Coriander Powder
  • 0.17 Teaspoon Garam Masala
  • 0.08 Teaspoon Dry Mango Powder
  • 1/4 Teaspoon Salt
  • 0.17 Cup Chopped Coriander
  • 1.33 Tablespoon Oil

Directions: Achari Arbi Recipe

  • STEP 1.Wash the Arbi and boil them in a pressure cooker till you get 1 whistle. Let it cool down.
  • STEP 2.Peel the skin of the arbi. Cut the arbi into rounds.
  • STEP 3.Heat oil in a pan. Add arbi and fry them till light golden brown.
  • STEP 4.Heat 1-2 tablespoon oil in a pan and add the mustard seeds, cumin seeds, carom seeds, fennel seeds, fenugreek seeds, nigella seeds and heeng. Fry them for a few seconds till they start to crackle.
  • STEP 5.Now add green chillies, ginger and tomatoes to the pan. Cook till the raw aroma of the tomatoes goes away.
  • STEP 6.Then add red chili powder, turmeric powder, coriander powder (dhaniya), garam masala, dry mango powder and salt to taste.
  • STEP 7.Fry the gravy for a couple of minutes till it is properly roasted. Add curd along with 1/2 cup water and cook on low heat for 4-5 minutes.
  • STEP 8.Stir continuously while cooking, otherwise the the curd will curdle.
  • STEP 9.Finally add the fried arbi pieces. Close the flame and let it sit for 15-20 minutes. Add coriander to garnish and serve hot with roti, poori or paratha.
