Ingredients for Acaraje Recipe

  • 56.25 gram dry black eyed peas
  • 1/4 No.s onions, chopped, divided
  • As required Salt
  • 27.50 gram shrimp, plus more for serving
  • 1/2 cup coconut milk
  • 5.25 gram roasted peanuts
  • 8.75 gram Cashews
  • 0.13 cup manioc flour, toasted
  • As required Grated ginger
  • 0.38 cup palm
  • 0.06 No.s Onion

Directions: Acaraje Recipe

step 1

  • STEP 1. add peas and process until they turn coarse. transfer the coarse peas in a bowl of cold water and discard the floating skin.

step 2

  • STEP 1. soak the peas in water for about 8 hours and then drain the water.

step 3

  • STEP 1. blend soaked peas and chopped onions in a food processor and blend them well to make a paste.

step 4

  • STEP 1. season it with some salt and mix well.

step 5

  • STEP 1.in the food processor blend shrimp, coconut milk, peanuts, cashews, remaining chopped onion, manioc flour and ginger until it combines well.

step 6

  • STEP 1.cook the prepared mixture in a pan on medium heat and season with some salt. add a little palm oil for flavour and mix well.

step 7

  • STEP 1.heat oil in a pan and cook shrimp well from both the sides. slit it from the center and stuff with peas mixture

step 8

  • STEP 1.serve it hot with some salsa.
