'Acar awak' are pickled vegetables which are mildly spiced, sourish and with a tinge of sweetness too. It serves as a condiment as well as an accompaniment to many local dishes due to its tantalizing flavours. Acar awak is a pickled vegetables dish known best within the Nyonya or Peranakan community. Usually, it is prepared in large amount and stored in glass bottles for later consumption as these pickled vegetables taste better as they age. Usually enjoyed as a side dish or condiment along with rice, it stirs up the appetite.

  • 180 gram Carrot
  • 180 gram cucumber
  • 2 teaspoon salt
  • 600 milliliter Water
  • 4 teaspoon white vinegar
  • 90 gram white cabbage
  • 60 gram French beans
  • 80 gram cauliflower
  • 3 cm fresh turmeric
  • 1 Nos candlenuts
  • 3 Nos fresh chilli peppers
  • 4 Nos shallots
  • 3 cm galangal
  • 3 garlic cloves
  • 1 stalk lemongrass
  • 2 tablespoon Oil
  • 1 teaspoon tamarind paste
  • 5 gram shrimp paste
  • As required Salt
  • As required Sugar

How to Make Acar Awak Recipe

step 1

STEP 01

Cut carrots, cucumber, french beans, cauliflower and cabbage into pieces.

STEP 01

Deseed cucumber, mix cucumber and carrot in 2 tsp salt and store in the refrigerator.

STEP 01

Boil a pot of water, add 2 tsp of vinegar add cabbage and french beans and cook it for one minute.

Place carrots, cucumbers, cabbage, french beans and bake it in oven for 40 mins.

STEP 01

Grind chillies, shallots, candlenut, turmeric, galangal, garlic, lemongrass until smooth.

STEP 01

Add oil in a pan & heat it. Now add ground ingredients and saute them. Then add water followed by tamarind paste and bring to boil.

STEP 01

Once it begins to boil, add shrimp paste, vinegar add salt and sugar as per taste.

Add crushed peanuts into the chilli paste and put off the boiled veggies from oven and add it into pan.
